Captain Rodney's Cheese Bake

This morning, I mentioned to the ChemE that after the middle one’s basketball games, I need to go by the grocery store and pick up meat for next week. He looked at me with great interest and asked me to look in the front  mesh pocket of his computer bag. I looked and there was a bottle of Captain Rodney’s Sweet and Spicy Glaze. Attached to the bottle was a recipe for Captain Rodney’s Cheese Bake. “Well, that looks interesting,” I said. He went on  to tell me that his boss gave him the bottle of glaze, and said that it was worth every last calorie. I raised an eyebrow. Interesting. 

It is very easy to make, and oh, my….so, so good! However, I don’t know how readily available Captain Rodney’s is in the grocery stores. The website is Here you will find all of their products, as well as other recipes. I fully intend to purchase some more of the Sweet and Spicy Glaze, as well as a few other goodies to try!

 Captain Rodney’s Cheese Bake. 


  • 1/2 cup mayonnaise
  • 8 oz package of cream cheese
  • 2 cups grated sharp cheddar cheese
  • 2 green onions, chopped
  • 6 Ritz crackers, crushed**
  • 8 slices of bacon, cooked and crumbled OR 1/2 cup of “real” bacon bits
  • 1/2 cup of any Captain Rodney’s Glaze ***
Preheat oven to 350*F. Mix mayonnaise, cream cheese, sharp cheddar cheese, and green onion until blended. Place in a pie pan. Top with crushed crackers and bake for 15 minutes. Remove from oven and top with bacon and Captain Rodney’s Glaze. Serve with crackers.
**6 Ritz crackers are not enough. I used between 8 and 12. I can’t give an exact number because I crushed the 6 on top of the mixture, and could easily tell it would not cover the entire dish. I added a few more, then a few more until I had covered the entire dish. 
***I can only speak for the Sweet and Spicy Glaze. It is amazing on this! It gives the mixture just enough of a “kick” that it doesn’t hurt, and leaves a very sweet, smokey taste in your mouth.

  2. At first I thought it said Cheesecake bake and I paused a bit at what was in it, lol. Sounds delicious. I wonder if I can find Captain Rodney’s around here.

    Like Billie, I thought it said cheesecake too. I blame it on trying to lose weight! But seriously this looks and sounds fantastic. Captain Rodney’s is something I will have to look for.
