Pina Colada Cupcakes Recipe

I am on a foodie group on Facebook and I was looking over some awesome blogs and Recipes I came across this great sounding recipe called Pina Colada Cupcakes on Run DMT blog. I know I am on Nutrisystem and thought to myself I must try these and you can make them low fat.

I was going to the grocery store for our boating food so I figured I would get the stuff to make this recipe.

Ingredients:

1- Box Betty Crocker Super Moist Yellow Cake Mix

1-20 oz can of crushed pineapple

Directions:

Pre heat the oven to 350 degrees. Combine the cake mix and crushed pineapple and mix on medium speed for 2 minutes.

Prepare muffin tins and laddle about 2/3 full. Bake according to the cup cake directions on the cake box.

Pineapple Cream Cheese Frosting

Topping Ingredients:

8 oz cream Cheese

20 oz crushed pineapple drained of all liquid

1/4 cup sugar

1 cup of sweetened Coconut flakes

Directions:

Combine cream cheese, drained crushed pineapple, sugar, coconut flakes in a medium bowl until combines really well.

Spread on cooled cupcakes.You will need to keep in fridge because of cream cheese.
